Title: Lazy 'Sourdough' bread
Post by: courton on May 08, 2013, 11:09:20 am
I made the Lazy 'sourdough' bread from the blog journal of a french foodie

http://journalofafrenchfoodie.com/2013/01/16/lazy-sourdough-bread/

Have to say, very easy to follow recipe and easy since it is all made well beforehand. You just need to take it out for an hour for a second rise anytime from 3 - 15 days after the first rise. Easy! And really yummy. Well worth trying. 5/5 from the mini hospital here!

Looks like a nice loaf.

I particularly liked her hint, which I have never heard before:

"Tip: to clean your hands and TM bowl, don’t use water straight away but add a little bit of flour to dry the bits of dough and rub it off into the bin. When most of the dough is gone, then use water to finish cleaning. This will avoid clogging your drain pipes!"

The bread tastes even better toasted the next day.

Courton,  it is good to see another bread recipe,  and one that is so easy and mimics Sour Dough.  However it is not SD as it has yeast in the basic recipe.  Genuine SD bakers will not have yeast in their bakery,  for fear that it will contaminate their natural/ wild yeast starter.   I know that I am a bit passionate about this and get very annoyed when bread shops sell stuff that they call SD,  and price accordingly,  and it has yeast in it.  The yeast provides a reliable and predictable lift to the bread.  Even a 1/4 of a teaspoon will do this.
Make this bread and enjoy it ,  but if you can, make some real SD and taste the difference.

Dear ACW I have made your sourdough bread and it is absolutely scrumptious.

I did enjoy this bread too...however, as you can understand I did not name the bread. I was merely following the recipe and called it the name given by French Foodie. However, I have made minor edit to the name in the heading so that it is clear to anyone making this bread that they are not cooking a traditional sourdough bread.

Thank you Courton,  well done.  I was not 'having a go'  at you.  It is just that last weekend i went to a country market and the bread stall was selling , what they called SD.  They had samples out and it was obviously not SD.  I questioned them about it and they avoided the question.  they were charging $6/7 a loaf.  How are people ever going to taste the real thing when this is going on. ?

I must agree Chookie, some people have no scruples at all. DD brought home some bread from a shop selling "'sourdough' with a very old family starter. She thought she would buy it and she could compare it with what I made. It was expensive she said. When we ate it, it wasn't a sourdough at all. Just a pathetic, crusty loaf of bread.

I am so missing our homemade bread. We haven't been away a week yet! The bread machine is ok and will have to do.

Hi Cookie,  have a great trip.  I have found the best bread in the Bread maker is a no fuss mix, 2 nd rise in the bucket , paddle removed, , until 3/4, then bake only in machine,  for 1 hour and 2 mins.
However that loaf in the photo looks great.
