Title: Steam while making Risotto?
Post by: LucyW on March 24, 2013, 08:04:31 am
I was just wondering if I can be steaming a separate meal whilst I am making Risotto? Do I have to turn the temperature up? Add more water to the riso? Thanks.

I don't think it would work Lucy. Most risottos are cooked on low speed with the butterfly, and I find the TMX steams most effectively on speed 4. There also wouldn't be enough liquid to produce steam.

I agree with Amy. Speed 4 and varoma temp work best for steaming. Risotto doesn't have enough liquid and would burn at varoma temp.

I think you can steam at lower speeds but you definitely need Varoma temperature which I think would be too hot for the risotto.

The UK Fast & Easy cookbook doesn't use the butterfly for making risotto and so I've never done so and the risotto turns out fine.  I usually cook mine at about speed 3 as it stops it sticking,.

You do need to keep the risotto moving otherwise you will end up with a nasty burnt mess.
