I love making cakes in the Thermomix and was wondering if anyone had tried that old fashioned recipe where you weigh the eggs (in their shells) 3 for an average cake, 4 for a large one, and then use that weight for the flour, sugar and marge. Then all you do it blizt for a couple of minutes. I think that might work a treat in the TM. You could put the eggs, in their shells, in the TM and use it to weigh them too. I think I might try this next time I make a cake. How long do you think the mixture should be blitzed and on what speed? I don't think I am experienced enough to judge that just yet, but I'm sure you all are. I'd love to hear what you think.

If you look on page 232 of the Fast and Easy Cooking the recipe you are looking for is there, called "Quick Sponge Cake". ;) ;D Have fun making it ;D

Duh, I have looked through that book loads of times and never noticed that recipe. Now I shall definately have a go. Many thanks CC.

Will do. I always found it a good way to make cakes prior to the Tm. You always knew that the mixture would be the right consistency, whatever size eggs you used. I'll report back when I've made a cake.

I'm a bit fussy with my sponge cakes, as I'm sure you are. I like them deep and very light.
