Title: GF, dairy-free, egg-free chocolate custard

Can't take all the credit for this one.  My consultant gave me the recipe and I have tweaked it to fit our family.

80g raw sugar
35g arrowroot
500ml rice milk
approx 1/2 teaspoon cocoa (we have a GF, dairy free cocoa and it is really strong - you might like to adjust this to your taste)
1/4 teaspoon vanilla

Process sugar until of icing sugar consistancy.

Add all remaining, 10mins, 100 degrees, speed 4.

We eat this cold and it certainly thickens once in the fridge and needs a good stir before serving.

I made this tonight as I had promised the kids some custard and then realised I had no eggs. I didn't add the cocoa (as we were having it with fruit pie) and I used cows milk instead of rice milk (so not dairy free). The flavour was really good but I did find it a little bit... stringy? Hard to describe but it was a bit unexpected.

As I said, the flavour was great and we would make it again. I have left overs in the fridge to see what it turns out like tomorrow as a snack.
