Title: nut allergy-needing something to jazz up rice milk recipe
Post by: Mockingbird_2010 on March 07, 2013, 06:45:13 am
Hello all,
New to the thermie (about 2 weeks now....) LOving it- just as a side point
However, the 2 boys/men in my life (One 32 yr old, another 2.5yr old) are both HIGHLY allergic to tree nuts. So I cant employ the "almond effect" in my efforts to create a lovely rice milk for them both to drink.
I have tried the rice milk recipe (Organic Brown Rice approx. 50g, water, dash of salt and a splash of maple syrup) but it taste quite bland, and watery. Not to mention, far to thick for my 2.5yr old to drink out of a bottle.
Can anyone give me any ideas as to brightening up the taste, and getting a more "milk"consistancy without diluting it with more water.
Cheers

Hi Mockingbird_2010, welcome to the forum.  Here's (http://www.superkitchenmachine.com/2011/14176/dairy-free-soy-rice-nut-milk-recipes.html) a link to the Superkitchenmachine blog which has links to different milks which may suit your needs.

I think that the rice milk is a bit thin on taste.  I think my Dd adds vanilla.

Yes i think helene at skm has a recipe for creamy oat milk??? Are they also allergic to dairy?? Im sure you will find something.. Quirky jo is also good with alot of substitutes but she does use alot of nuts.. You can always post on her blog asking for a no nut no dairy creamy milk recipe?? I read in one recipe she had lecithin to make it creamy??

Hello all, and thank you for your input.
There is a dairy intolerance, thus the reason for rice milk. Tried without success to get my lil man to drink Goat's milk, but he wouldnt have a bar of it...come to think of it, neither would mu husband.
Oat milk, havent tried, so may give that a go and see how it goes down.

It's interesting how we all respond to different tastes - I absolutely adore anything goat - milk, cheese in all its forms.  For me it's TDF!!  But I have friends who won't touch it with a 10ft barge pole . . . . :-))

Good luck with finding just the right "additive" to spice up that rice milk . . . have you tried an enquiry to Jo at  http://quirkycooking.blogspot.com.au/ - her recipes do add almonds but she may have some ideas for you. :)
