Hello, I have just cut up a chicken for a casserole for the first time ever (usually buy it cut up!)
Needless to say I didnt do a good job and have a meaty carcass leftover! What can I do with it, too nice to throw out! A lovely soup recipe would be great, failing that, stock? Any pointers gratefully recieved!
Helen

Break up the carcass and put it in the steaming basket Helen. Add boiling water to the bowl to the maximum level and cook 30 minutes or so to make a chicken stock. Then use the stock for any one of the chicken soup recipes here on the forum, this (http://www.forumthermomix.com/index.php?topic=3714.0) one of mine seems popular. Another popular one is chicken and sweetcorn soup, there are a couple of those on the forum. You can refrigerate the stock overnight then remove any fat that has solidified and there should be pieces of meat which you can remove and set aside to add to the soup later.

Perfect, it will make a lovely soup. The soup Judy suggested is lovely. Even though it has been really hot we had that the other night.

Made Judy's soup with my stock, mmm delish, got the thumbs up from here, so hearty and comforting. Enough for my lunch tomorrow. I love my thermomix so much ;D
