I'm trying to include vegetarian meals at least twice per week now. Trying to get SD's cholesterol down ;)
-
Ames which lasagna recipe do you use?
We all hate tofu.
The health experts are now saying 5 serves of veg per day :)
Will look for mitchs recipes :)
I have lost my taste of veg book, must hunt ut down.
Cp eats most veg apart from spinach.
H :)

Hally, I use one from the Heathy Food Guide magazine. I haven't made it often but its the one I use if I am making vegetarian lasagne. I've never converted it for TM. Do you want me to PM it to you? :)
Health experts have always recommended 5 serve of vegetables per day ;)

Cottage Cheese Patties: http://www.forumthermomix.com/index.php?topic=12291.0 (http://www.forumthermomix.com/index.php?topic=12291.0)
You can also make my zucchini quiches without the bacon and just add more vegies. If you omit the bacon you just need to add a little bit of salt ;)
I have some vegetarian cookbooks I can have a look through if there's anything in particular you want? :)
Cp sounds like a good eater, and there are plenty of ways to hide spinach ;D

We do 3 vegetarian meals per week and sometimes more. No tofu here either.
Indian, Mexican, Thai, Chinese, Indonesian, Italian , Greek loads of choices.
I usually omit the meat part of recipes and substitute with extra veg or beans, kidney, cannelloni, borlotti and chick peas.
-
Yes please Amy.
At school the notes from the healt dept come out as 2 fruit & 3 veg per day,
Today on sunrise they said it is now changing to 5 veg per day & red meat about 100g 4 x per week.
Will. E trying hard to do 2 veg meals per week. Winter much easier with soups.
Might make veg spring rolls & veg wontons in a veg broth :)

Hugh Fearnley-Whittingstall's River Cottage Veg Everyday is a really good vegie cookbook.

http://www.forumthermomix.com/index.php?topic=11846.0
It's really tasty.

I have that book and have so many recipes tagged to make I need to get onto it.
Hally here are links to a couple of things I've made off the forum and liked. First (http://www.forumthermomix.com/index.php?topic=11846.0)
Second (http://www.forumthermomix.com/index.php?topic=8558.0)
Third (http://www.forumthermomix.com/index.php?topic=3461.0)
Fourth (http://www.forumthermomix.com/index.php?topic=5646.0)
Fifth (http://www.forumthermomix.com/index.php?topic=5010.0)
I think there are others of Judy's I have made too.
You can put anything in risottos and quiches, with pasta.
We find the 5 vegies not hard to achieve if you have salad for lunch and then more vegies with dinner. Except perhaps on Tuesdays when I have run out of fruit and vegies. I guess that is why my fruit /vegie bill is so high each week.
-
My DH use to make a broccoli and cauliflower cannelloni with a spicy tomato sauce and cheese on top. It was superb! ;D
-
Thank you.
Its more trying to get cp having the extra veg at lunch as well, if not it has tombe made upmat night.
Today I cooked up carrots, he doenst like them raw. He eats cucumber, iceberg & cos lettuce. He doesnt really like anything raw ???
Some great ideas & links.
Keep them coming :)

Soup every night Hally. Veggies hidden in scrolls for lunch, or in things like zucchini patties, Amy's quiches.
-
Soup is a great idea for an after school snack, especially in winter.
-
Vegetable pancakes are another good one ;D I used to love them as a kid :-))
-
What about the veg sausage rolls or pasties (vegetarian) or spinach feta triangles, patties are good .. Can vary veggies and nuts and spices really whatever..
Cindi omearas recipes and also quirky jos website
Also the rainbow book is good.. And the new cafe retro books..
You could also search online.. Lots of options
Good luck..

Cottage rolls, lentil patties ricotta gnochi and of course risotto.
-
Tenina has a vegetarian lasagne in for foods sake which has got excellent reviews. Yotam Ottolenghli publishes a lot of really nice vegetarian recipes via The Guardian Newspaper website (or his book "Plenty" if you have it).
-
I love Quirky Jo's lentil Bolognese and Michelle Bridges Cottage Pie recipe that uses cauliflower mash instead of potato for the topping. So low in carbs too.
-
Some great ideas everyone.
i have FFS will look for the lasagna :)
Veg thursday this week, but next week will be starting our veg eals twice per week. :)

Finally had time to find some of the vegetarian meals we've enjoyed Hally.
Chookie's Sage & Black pepper risotto (http://www.forumthermomix.com/index.php?topic=9739.0)
Rainbow's Quick beanie mix (http://www.forumthermomix.com/index.php?topic=3943.0) (Jude Blereau recipe)
My eggplant parmigiana (http://www.forumthermomix.com/index.php?topic=5674.0)
So many lovely vegetarian meals out there.

The Zucchini & Rice pie is very nice. My non TMX friend loves this and makes it by just grating the veg. She adds grated carrot and mushrooms sometimes.
-
I saw Quirky Jo's lentil bolognese mentioned on this thread, so I made it yesterday for tonight's dinner.
A really fast, easy, tasty recipe. The only change I made was to add a chilli and some cayenne pepper to make it hot and spicy.
My DH and I both enjoyed it.
We're trying for a couple of vegetarian dishes every week too.
-
Good on you. My boys are not impressed, this week 1 only as last week we had a lot of left overs of a veg pasta dish.
:)
-
Tonight I made vegetarian lasagne, yum :D I think its the one I put it in those recipes I sent you Hally :)
-
My all time favourite is Quirky Jo's Chicken and Cashew Vegetables with Coconut Satay Sauce (http://www.forumthermomix.com/index.php?topic=5335.0) - except I use tofu instead of the Chicken but, if you don't like tofu, I think you could easily use a white bean, i.e. butter beans or lima beans.
Basically, if I see a meat based recipe I fancy, I just drop out the meat and adapt it, often with extra seasonings, spices, etc. The Revive Cafe books from Auckland are full of excellent, easy to make recipes. I got this list from their newletter which I recieved yesterday:
Here is the international "cheat sheet" that I use to help match healthy ingredients and flavours to different regions:
• Chinese: Rice, Noodles, Tofu, Asian Greens, Adzuki Beans, Cabbage. Flavourings: Soy Sauce, Sesame Oil, Miso, Sesame Seeds, Garlic, Ginger.
• Thai: Rice, Noodles, Coconut Cream, Bamboo Shoots, Bean Sprouts, Flavours: 5 Curry Pastes (Green, Red, Yellow, Penang, Massaman), Lemongrass, , Kaffir Lime, Lime, Peanuts, Ginger, Fresh Coriander.
• Mediterranean: Eggplant, Courgettes, Sundried Tomatoes, Capsicum, Tomatoes, White Beans, Puy Lentils. Flavours: Smoked Paprika, Mixed Dried Herbs, Olives, Garlic, Fresh Parsley, Fresh Basil, Fresh Oregano, Seeded Mustard, Balsamic Vinegar.
• Middle Eastern: Chickpeas, Tabouhli, Flavours: Cumin, Coriander, Smoked Paprika, Nutmeg, Sumac, Aniseed, Dates, Apricots.
• Mexican: Corn Chips, Burritos, Tacos, Red Beans, Black Beans, Chillies, Avocado, Quinoa. Flavours: Chilli, Cinnamon, Cloves, Cajun Spice, .
• Indian: Rice, Spinach, Tofu, Lentils, Cauliflower. Flavours: Indian Curry Pastes, Curry Powder, Cumin, Coriander, Fenugreek, Fennel Seeds, Cardamon, Garam Masala, Black/Brown Mustard Seeds, Chilli Powder, Turmeric, Ginger, Fresh Coriander.
There are obviously many cross overs and exceptions to the above but it is a good start for menu planning. Use this list if you have a particular ingredient or want to cook a particular style.
You will already be using a lot of these combinations in your everyday cooking anyway without necessarily realising or thinking about it.
Another (non TMX) favourite, is my Cashew Nut Curry (http://www.forumthermomix.com/index.php?topic=7978.0). Quirky Jo's blog is also one of my favourite sources of recipes. I am often asked what I eat (as a vegetarian) and the answer is very simple - I eat everything except meat! Don't think of it is a hurdle or deprivation, just think of it as opening up a whole new range of foods and recipes for the family.

I tend to make different things every day as there's so much to cook! One recipe I make a lot is Lentil Loaf. I'll try and convert the recipe for the Thermie and post it.
