Post by: Thermominoux on February 08, 2013, 06:03:03 pm
A new recipe translated into English. Another cake with almond flavour.

Step by Step photos available at http://thermominoux.over-blog.com/article-amarettis-114317226.html
Original recipe comes from Thermomix Recipe Area
(http://C:\Users\Kishore\Desktop\AMARETTIS-7.jpg)
AMARETTIS BISCUITS

Ingredients:
50 g sugar
200 g ground almonds
160 g icing sugar
20 g cornflour
2 Eggs whites
10 drops of almond flavour

Preparation:
Put 50 g sugar in the bowl and mix 10 seconds at speed 10 to make icing sugar and
set aside
Place all the ingredients in the bowl and mix 20 seconds at speed 4
Then place this mixture and allow it to rest in the refrigerator for 1 hour.
At the end of this time, preheat the oven to 180 ° C ( 355 °F)
Using a teaspoon, take a dollop of the pastry and roll in your hands to make a ball.
Then roll these balls in reserved sugar taking care not to flaten them.
Place them on a plate covered with a sheet of silicone or greaseproof paper
Cook about 20 minutes.

TIP:
Next time I will reduce the cooking time by a few minutes to obtain softer amarettis

It says roll in reserved sugar but is the Thermomix sugar milled the reserve sugar also states 160 gms icing sugar,  I was about to make them but am confused.

The first 50g sugar which is turned into icing sugar and reserved is what you roll the biscuits in at the end Brenda.

Have just mixed these, made 210 gms sugar into icing sugar, went up to speed 9 for 20 sec, then remembered hadn't done the almond so,I added them and ground them sp 9 about 10 sec , continued with the recipe and it didn't,t look right so looked up Armaretti cookies and the egg whites have been missed, so I added two egg whites, didn't rest them , but did roll them in the icing sugar they are in cooking now.

Very sorry my fault. Missed the egg whites. Updating recipe.

Hello, Judy has given the answer. Follow the link to the blog and you will have step by step photos ( about 10 photos ) of how to prepare the biscuit.

Have updated recipe cause I forgot the egg white.

i didn’t have any  almond essence so i used 30 drops of http://www.forumthermomix.com/index.php?topic=8038.0
Only baked them for 15 min at 170 F/F
I also was wondering, where are the egg whites? lol
Only baked a few today for DIL, but DS ate  them all   :-)). I will make  more tomorrow
