Raspberry Yoghurt Icecream
Makes about 2 litres:
Ingredients:
600g plain Greek yoghurt
600ml cream
180g caster sugar
300g frozen raspberries
1/2 lemon, zest only


Preparation:
Prepare caster sugar if necessary.
Place yoghurt, cream with the sugar in the bowl. Speed 7-8, 1 minute 30 seconds.
Fold zest and raspberries through. I did this with the spatula to,save the berries being broken up too much.
Churn in icecream machine

Tips/Hints:

I did a half quantity as I was worried the full amount wouldn't go into my icecream machine. This is best allowed to soften slightly before serving. It was adapted from a newspaper article.

Looks delicious Cookie :D I might try with blueberries as none of us really like raspberries ;)
