At last, mostly thanks to this forum, I have made and eaten very good bread rolls. As per the advice I got here, I used the recipe called "Plain White Rolls, No Fuss".
I took the time to ensure the rolls doubled in size - twice - before I baked them. They were smashing, light but crunchy on the top & bottom. Thankyou all sooooooooo much.
Now, another question, I'm afraid. Can anyone recommend brown rolls/bread with nuts/ seeds, that will work as well as this white recipe? Could I use the same recipe, but substitute brown flour with a few seeds?
I have just made chocolate pots and am waiting for them to cool and set before tasting. Wow, I just love my new toy.

Don't feel scared, just make them with the same recipe. When the time is up open up the oven and have a look. If they look delightful they most probably will be. If not ready pop them back in. Then make a note on your recipe for next time if you need to improve somewhere.

i make the no fuss with wholemeal flour the only thing i change in the amount of water i use

wholemeal flour needs more water or you could add less flour.

I'm glad the rolls worked out for you. :)
I often replace some of the white flour with wholemeal, or add some seeds or whole grains. It is a great recipe.

Yaaaaah, I knew you could do it. Congratulations. Yes , use wholemeal flour and you can substitute up to 100 g. Of flour with seeds. As Uni says, add a bit more water.
As you are new to bread making, make wholemeal rolls or loaf , first without seeds. you will then know what it looks like and how the dough behaves. I usually only add 50g of seeds. This is the texture we like.

Chookie's bread is fabulous as you've discovered! Another recipe you might like to try is Isi's "very normal bread" (http://www.forumthermomix.com/index.php?topic=2665) which I've had success with (and I'm a novice). It is a tad sweet but you could probably reduce the sugar and it'll be fine.
Good luck! I make bread all the time now, hard to go back to shop bought stuff..
