Cottage Cheese Patties
INGREDIENTS
1 large onion cut in quarters
500gms cottage cheese (I used low fat)
2 cups of boiled rice
1 egg
1 pkt leek and cheese soup
2 tbsp of plain wholemeal flour
70gms rolled oats
egg wash
multigrain bread crumbs
METHOD
*Chop onion on sp6 for 5 secs
*Add all the remaining ingredients to the *: except egg wash and crumbs and combine :-: sp4 for 10 - 12 secs (this will be a moist mix)
*Refrigerate for 1 hour.
*Form into patties - refrigerate again for 1/2 hour if necessary
*Dip in egg wash and coat in bread crumbs
*Refrigerate for 1 hour
*Heat a tbsp of oil and gently cook about 6 mins each side or until golden brown
Makes 16 man sized patties. For lunch boxes form into balls using a small scoop - makes heaps
Tip: You need to work quickly with the mix and refrigerate as necessary - it is a moist mix and a bit fiddly.
I have no idea where the recipe come from, I have been making it since before kids and know they loved them in their lunch box. My recipe is hand written.

Yummy Michelle, I will try them.
-
These look great Mich ;D What do you serve them with? I imagine they might be nice with sweet chilli sauce :D
-
Usually just cold on their own. Chilli sauce would be nice with them - DH would like that.
-
Thanks Mich :D I'm trying to find some nice vego meals that mum and SD would enjoy. Your meatless balls are also on my list ;D
-
Sounds yummy, and I'm starting to think about lunchbox ideas - especially savoury & filling things. Thanks!
-
Thanks Michelle these sound good. I will give them a go soon.
-
Mich, I loved loved loved these patties :D :D :D Thanks for the recipe!!!! :-*
I baked mine in the oven and served with Chookie's 2-second salad :)
-
They look good. Glad you liked them Amy.
-
Sound good.. We make a similar recipes but not the same quantities and with french onion soup..i love them :).
-
Good idea Kim :)
Mich, we're going to have the leftovers in sandwiches today ;D I can't wait! Yummmy :D
-
I think baking them in the oven is a great idea Amy. Do you think these would work with ricotta, or would it be too sloppy?
-
Thanks Cookie :D Is ricotta sloppier than cottage cheese? I did find that they were very fragile to flip with the baking method, but I don't know how it compares to frying because I didn't fry any. Mich might have a better answer ;)
-
Depends amy.. Normally commercial ricotta ie in a tub are more liquid but other forms from the deli can be alot less liquid
-
I think a firm ricotta would work.
I couldn't find cheese and leek soup when I went looking for it. May have to use Frozzie's version of French onion soup.
I'm going to try them in the oven next time - excellent idea Amy. :D
-
Thanks Mich ;D You know me, always looking for a healthier option! :D
I don't think I actually used the leek and cheese soup mix... I think I just added some parmesan to give a little bit a cheesy flavour ;)
-
Thank you all. :-*
-
Sounds like they're perfect for lunch boxes, thank you for sharing! Do you reckon I could sub leek & potato soup with 1 Tbsp of vege stock paste and perhaps a cup of grated parmesan?
-
Dhitri, I think 1 cup of parmesan may be a bit much because it does have a very strong flavour... perhaps 1/2 cup?
-
Hi Amy, yes 1/2 cup sounds like it will be enough :)
-
The recipe is fairly forgiving, so I think as long as the quantities are the same, a substitute is fine :)
-
Using veg stock concentrate instead of leek soup package and subs panko bread crumb for breadcrumbs. DD loves this a lot, perfect for vacation care lunch box.Thank you, Mich!

Glad you and your family enjoyed them Denzelmum :D
