Title: Fresh Yeast vs Dry Yeast - conversions

I've only ever had dry yeast on hand and came across some recipes I'd like to try that specified fresh yeast.  For new kids on the (bread) block like me, this site was very helpful . .  :D

wouldn't even know where to get fresh yeast from in Australia. I remember Isi always used to use fresh yeast. Remember Isi's yummy recipes?

Some delis stock the fresh yeast I believe.  Apparently it's more pure than the dried which I was surprised to learn. If I come across it I'd like to try it.

10 grams fresh yeast = 5 grams traditional dried yeast = 3 grams fast acting easy yeast.

Traditional dried yeast is bigger granules and needs to be activated in water. This is what I mostly use. In UK made by Allinsons comes in tin, store in fridge. Never failed yet. Yeast pure and simple. With Chookie's recipes saying 1 tsp of dried yeast, this is what I use.

If I can get fresh then I do use that. Using fresh at the moment, and the bread is even better.

Fact acting easy yeast is in sachets of about 7 grams. Smaller grains and contains additives. Add straight to flour.  I only use this in emergencies when no other in house, but think that is what a lot of people use on here.

Only ever use fresh yeast.. Just prefer it.. Have only used dried when ive run out of fresh and couldnt get more..in europe its readily available in the supermarkets in 40g cubes..much prefer the flavour of fresh to dried and yes you can taste the difference..

I just went o a local bakery.. Think it was brumbys or one of those.. Just asked at the counter and the boss came back and asked me how much i was after.. Got 100g so enough for 5 loaves for $2..

Ive never seen it in shops here only at the bakery after asking but good luck...dont forget as its fresh and very active it needs to keep cool and refridgerated until use so if out gt it last before heading home unless you have an esky or fridge in your car.. Thy will probably warn you anyway..

Thanks for the tip, Frozzie... Wouldn't have thought about that...in this heat especially will take a cooler bag and brick.  How long do you think it lasts in the fridge ?

I use mine fairly quickly but depending how its wrapped.. Id say a couple of weeks if its well sealed but if ou dont think you will useit you can freeze it in 20g portions... I just keep mine in the fridge and use it when needed..mine is just in a knotted bag from the bakery (plastic)

I love fresh yeast but find it very hard to get. I used to have a health food shop nearby that stocked it but they have stopped. Most of my bread is made with dry yeast.
