Title: Carrots! (A challenge)
Post by: RhubarbWhine on January 02, 2013, 11:12:03 pm
I have 10 kilo of carrots - obviously will need to make some items that can be frozen :)

Apart from carrot cake, which only uses a few - I'd love  some thermi suggestions for recipes or ideas that will help use up my amazing amount of carrots - can you help?
Go!

Carrot soup, lots of thermomix recipes for this.

Carrot cake - my favourite is this (http://razen20au.blogspot.com.au/2008/04/brazens-thermomix-carrot-cake-2-cups.html) one.

Carrot Halwa from the Indian cookbook - I wasn't that keen on it as is although others like it - I did turn it into a carrot slice though and that was great.  You could make the mixture and freeze until needed.  I haven't got my Indian book at the moment, it has never come back from DD's place otherwise I would give you the recipe.

Carrot & Orange juice from the EDC - I use 2 carrots, 3 oranges, 1-3 tspns sugar, 200g water & a tray of ice.

Chookie's Carrot & Lemon Marmalade (http://www.forumthermomix.com/index.php?topic=2349.0)

Thanks to Amy :-) for those links- ta!

judydawn - carrot and lemon marmalade sounds awesome! I don;t yet have any thermi books other than those I got with delivery. Do you recommend them?  The Indian one sounds as if it could be very useful to a big foodie like me?

Great idea about a sofrito, too, goldfish - thanks

Also excellent are

Quick Fix in the Thermomix by Alyce Alexandra

I'm on my phone's tappatalk ATM so can't add the links but if you google them you can find the relevant sites.

I love Vietnamese pickled carrots. Very delicious in salads, rolls for lunch etc. You basically grate the carrots and soak in a solution of vinegar, sugar and water. Luke Nguyen"s recipe from the Secrets of the Red Lantern cookbook. I can't find my oopy at present but could source the recipe if anyone"s interested.

Not yet . . . it's a gorgeous book.  The recipes notwithstanding, the story of his family fleeing Vietnam and coming to Australia for me was incredible.  I'll pm you the carrots if you like . ..

Thanks, this is right up my alley. Is this similar? http://www.acupofmai.com/2011/07/vietnamese-pickled-carrots-daikon.html (http://www.acupofmai.com/2011/07/vietnamese-pickled-carrots-daikon.html)
I have Luke's Greater Mekong book, but it doesn't have the carrot dish.

I have found a recipe I would like to adapt  for the thermi - it sounds lovely :) http://uktv.co.uk/food/recipe/aid/513348 (http://uktv.co.uk/food/recipe/aid/513348)
I am not sure how to start with the  adaptation though.

Just had a very quick look at the link.
It may be too big for  *:
I'd use the  *: for some of the preparation but make it as the recipe says in a pan.

There are very experienced  *: users on here who will be able to give more advise I am sure.

I just had a quick look. I would grate the required foods in the TMX. Then when it comes to the cooking I would cook similar to jam.  That is cook at 100 degrees and then if not thickened cook at Varoma with the basket on the top of the lid to stop it spitting everywhere.

Thanks Cookie and Droverjess. I am thinking along the same lines so will let you know how I go :)

Like Hally I grate them into main meals and are especially yummy in spaghetti Bol and lasagne. Grate into pasta salad, sausage rolls, meatloaf and vegie fritters. Carrot cupcakes and muffins are nice too.
