Ok gf
Beef bones, about 5 or 6
Turn pc on to brown, add a little rice bran oil
Cook bones until brown each side.
Add 2 onions & 2 carrots chopped in TM
Water to just cover bones, in pc water doesnt evaporate
1/4 cup tomato paste
1/2 cup red wine
1tsp black peppercorns
Herbs of choice & garlic if desired
Small bunch of bay leaves, cook on high pressure for 1 hour
I dont add garlic or herbs apart from bay leaves.
You could do this for 4-5 hours on the stovetop.
Cool in fridge overnight, skim layer of fat off & use or freezer
Result, rich tasty stock :)

Is that Alton Browns recipe Hally?
It's the one I use and a lovely stock with good flavour.
He uses oxtails or beef shanks instead of just bones but the rest is the same. :D

Its based on what my mum used to do n her dancing pc.

He is a chef Hallyand his recipe is exactly the same apart from the meat.
He also adds star anise and other Asian spice when he is making Asian style food.
I have been using it for ages now.
I agree with you it's a great stock ;D

Just googled him, no idea where mum got it from but I doubt this guy as he was born the same year as me.
Mum always added herbs from the veg patch & garlic, I dont as I add them in when cooking as per what I choose to do.
She also did a chicken stock the same but using white wine for her casseroles.
I will try putting some asian spices in to ake an asian broth, good one :)

I guess all the ingredients just make a good stock.
My gran made similar but didn't use wine. She used celery, carrots as well as all the other ingredients.
I think the wine adds more flavour.
My mum used the same as my gran and both made a great chicken soup.
Mum was and still is a very basic not very good cook but my gran was a very good plain food cook.
Would recommend this stock to anyone. :D

My mum wasnt a good cook, but once a year a french chief who married my cousin, (cousins 20 years plus older than me), used to stay & he would whip up amazing food. He was a head chef in one of the top hotels in the carribean & he used to help mum cook, I think he gave her some good bases for things & she just stumbled around from there. She woukd make a few good deserts shen ne was around, then it was back to rice pudding, lemon bud etc. He would be in his 70's now, they live in Bordeau, i speak to my cousin occasionally.
