Does anyone have a recipe/tutorial for making seitan (wheat meat/gluten meat) from scratch?

There are plenty of postings if you ask Mr Google  TL - I can't download fast enough at the moment to give you any links though.

It's so long since I made seitan that I can barely remember the method but I am sure, with a bit of experimentation, you can make it in the TMX, it could be a bit fiddly though.  However, I, for one, would love a conversion if you ever get a chance.

Thank you CC! I also found this one that makes seitan from scratch (from actual flour and not vital wheat gluten flour). http://www.eatingrules.com/2011/10/how-to-make-seitan/ guess what I'll be doing this weekend :)

and last night decided to make seitan (spur of the moment thing).

So easy!!! I ended up with this beautiful slab of gluten meat. Will cook it this noon and see how it turns out :-)

That looks good, thermielove.  How did you cook it - in vege stock or using the recipe on Tebasile's page?

I like the look of Tebasile's seitan stroganoff recipe too.  Thanks for steering me in the direction of that blog.

Hi C,

I cooked it in vege stock as I was following Tebasile's recipe to the teeth, but then realized that I had not washed out all of the bran etc, it was underprocessed, so the gluten kind of disintegrated. But I turned into meatloaf and was pleasantly surprised at how good it tasted. I minced the gluten meat with carrots and kidney beans. We had half for lunch - Will turn the rest into burger patties. This shan't deter me! I have another sack of wholemeal flour and will try again tonight :)

That was very inventive.  I've got some wheat here that I can mill up, perhaps in the next day to two (although, knowing me, it will likely be a week or so) and use in this recipe.  I'll look forward to hearing your results - that should goad me into action.  Good luck with your version 2.
