Title: Recommended Knife Sharpening Service

I have found an excellent knife sharpening service here in Melbourne (and they are also in Sydney so I am assuming they are just as good up there as they are down here).

It is a shop called Chef’s Armoury.  I ruined my lovely Japanese laminated knife many years ago and chipped a chunk c. 3 mm out of the edge.  I couldn’t entrust the knife to one of the usual knife sharpening services as I believe that the grinders they use run too hot for laminated blades and that isn’t good.

Anyway, I sent my knife off to the Melbourne shop to be sharpened and it came back perfect a couple of days later.  I just wave it at a tomato now and the tomato (almost) slices itself!  I know you don’t believe that that’s a bit of an exaggeration, but you get the idea.  Cost was a modest $40.00, which I thought was pretty good to get my good knife back and working properly again.

Some beautiful knives on that site. I love a good sharp knife, I never put my good knives in the dishwasher orb the drawer, hang them on a magnetic rack.

My SIL offered to cut the pork belly on Saturday but gave up when the knife wouldn't do it for him.  He told my DD to put a good carving knife on my Christmas list and I ended up carving the pork myself  :-))

All my knives need sharpening, they are all blunt. We are aughty they go in the dishwasher.

I am lucky my DH sharpens my knives on a wet/dry stone and gets a good edge on them. They can be maintained with a steel then for several months.

I just had my knives sharpened by a local guy - $5 per knife. He did a great job - I have a throbbing cut on my finger to prove it! I had my seeing scissors done too - just bliss cutting with them now!

I also am passionate about my knives.  I have several ceramic ones.  The trouble with these is that they do blunt after a year of constant use and have to be sent away to be sharpened.    I have asked DH for a special ham slicing knife for Xmas.  My father gave me a Dick knife when we were married and I still use it .

When we need a new knife we usually go to Master Butchers. Anyone can go, they are in Canning Vale for WA's.
