Santa's Buttons
Ingredients:
150g butter
50g sugar
Splash of vanilla
190g flour
35g cornflour
Approximately 1/2 cup finely chopped walnuts or pecans (I used pre-crushed walnuts. They're cheaper ;))
Red jam
Method:
1. Preheat oven to 160 degrees and line trays with baking paper. If not using pre-crushed nuts, chop them in TM to desired consistency before starting recipe.
2. Melt butter for 5 mins/60 degrees/speed 2.
3. Add sugar, vanilla, flour and cornflour. Mix for 10 seconds/speed 4. Scrape down sides of TM bowl and mix for a further 10 seconds/speed 4 or until combined. I would recommend adding the chopped nuts in this step to mix them through. The original recipe says to coat balls of mixture in the nuts but I found this very time consuming and most of them fall off after cooking anyway.
4. Whatever you decide to do with the nuts, flatten the balls of mixture on the trays and make a small indent in the centre. Fill with jam and bake for 15 - 20 minutes or until a light golden colour.
These biscuits are delicous. They are basically a shortbread with walnuts and jam :)

The biscuit dough is more of a shortbread than the usual jam drop. It is a bit different to other jam drop recipes. Mum said these were nicer than plain jam drops ;)
