Little Apple Pie Cakes
From "The Baking Cookbook" :)
Ingredients
Topping:
40g plain flour
1/2 tsp mixed spice
25g butter
40g caster sugar
Next time I will halve the topping because it makes much more than is needed.
Cakes:
50g butter, softened
70g sugar (I used LoGicane sugar)
1 egg
150g plain flour
1 1/2 tsp baking powder
1/2 tsp mixed spice
1 large cooking apple, peeled, cored and finely chopped (I did this by hand)
Milk or juice, as needed
Method
1. Preheat oven to 180 degrees. Grease muffin tins or line with cupcake papers.
2. Make topping by mixing ingredients for 10 seconds/speed 6. Give the mixture a stir with the spatula and mix for another 10 seconds/speed 6. Set topping aside.
3. For the cake batter, beat butter and sugar for 30 seconds/speed 6. Then, with TM running on speed 3, add egg through lid and continue mixing for 20-30 seconds until combined.
4. Add flour, baking powder and mixed spice. Mix for 30 seconds/speed 4.
5. Add apple and a splash of milk/juice. Start mixing on reverse + speed 4 and watch through hole in lid. Add little splashes of milk/juice as needed until the mixture is a sticky batter.
6. Spoon mixture into prepared pans and sprinkle with topping. If you are using mould like mine, you will have to put the topping in the bottom of the pans. (So really it become bottoming rather than topping ;D)
7. Bake for 15-20 minutes or until cooked through.
These cakes are best eaten the day they are made. Very nice straight from the oven with a scoop of vanilla icecream ;)

They do cookie, but it is really the same colour as the cake so you can't see it very well :-\

It was a great quick afternoon tea, not sure I got 12 cupcake sized ones and just kept sprinkling until they were even, going to have some for dessert with custard, can't wait
