It was a perfect day for something like this. :D
I made half of the chicken salad part of the recipe and the full amount of the dressing as I thought if it was anything like the Vietnamese Dressing of Tenina’s then it would be very good. It is. :P
I did reduce the palm sugar to 30g as my oranges were quite sweet anyway, used a deseeded, long red chilli (still had a good bite) and only added a good shake of fish sauce.
I made the dressing first and didn’t clean the bowl before continuing with the recipe.
The only thing that I will change next time; is to use the flesh from a cooked chicken, whether it’s one I’ve made or a bbq one from the store.
The left over dressing will be used up for sure, it’s delicious! :D

Made this recipe tonight for dinner, Lovely. I liked the combination of veg and fruit. Like Julie i used a bought BBQ chook.
The dressing is a nice blend. Perfect for a hot night and although light it was quite filling. I will make this again. Thanks Tenina.

I made this for dinner tonight - really satisfying, even for DH who would not generally consider a salad a complete meal. He loved it and after the first bite said "you can make this again".
The only change I made was using apricots instead of mangoes - mangoes were $6.99 each. Oh, and only put in a tiny bit of chilli - the kids find things too spicy, so starting slow.
Absolutely delicious - I'm just slightly disapponted how little is left as I was planning on taking the rest for lunch tomorrow LOL.

I made this one for Xmas eve dinner with friends using prawns instead of chook - it was lovely!
I didn't use strawberries either - but subbed with orange segments instead.

This is my absolute favourite salad ever!
The dressing is delicious & makes a lot, so I store it in the fridge as it keeps well.
With the quinoa & chicken, the salad is substantial enough & loved by the men in the family too!

How long do you think this dressing will last in the fridge? I have some that has been there over a week - still smells fine - and was wondering if it would be OK to use tomorrow?

Personally I think the dressing goes a little bitter after a day…so like to use it all up first go…but it should keep well. It wont go off. But just the flavour of the mint becomes a little acidic and bitter…(a lot like me with age!)

I know I am a pest Tenina but maybe another note that could be included with recipes - how long to keep dressings.

Thanks Tenina - mayabe my taste buds arent that sophisticated, because I have been using it on my lunch for work every day this week - just throwing together some salad stuff with some left over roasted chicken meat, and the left over dressing. Still absolutely delicious! I cant taste any bitterness at all ;D

Just bringing this one to attention again; we had it for Christmas lunch with other meats. I used cooked chicken as others have done and loved the dressing which we used up over the rest of the week; not bitter to us. Great summer salad especially if entertaining.
