Need
1 liter of Apple Cider vinegar
2 1/2 cups of Raw Sugar
2 cups of water
1.2 ks of dried fruit,( I used 400g each of Figs, Apricots, Pears/ peaches and a handful of Raisins
4 Tablespoons of Wholegrain Mustard
2 teaspoons of yellow mustard seeds
1/2 cup of lemon juice
4 cloves of crushed garlic
1 Tablespoon of salt
4 Bay Leaves.
Do
In a large pot boil sugar, water and vinegar.
Add fruit. (I cut the figs in 1/2 and remove the little hard stem, then cut any large pieces to about the same size as the figs)
Add everything else and simmer for 30 mins, or until all fruit is tender.
Ladle into jars and seal.
This makes 7 medium size jars.
Best to use jars with plastic lids or those that are lined.

Hope you have a photo to post Chookie. Do you have to let them mature before use?

Photo of fruits etc before added to vinegar and sugar mix.

Judy, you use them as you would chutney or pickle. This is the Italian version. There are many different mixes, but this is the one we like. If made now they are ready for Xmas.

-
Frozzie, it is a bit sweet/sour. Cuts through the fat of roast pork and turkey.
-
Something i will have to try i guess..sounds interesting... Probably something you love or hate?
-
Sounds nice Chookie, might make a half batch. ;D

Had this, or something similar but stronger, when we were in Italy last - blew my head off - flame spouting out my nostrils - the waiters had to grab the fire extinguishers - my poor sinuses are still recovering.

Had similar experience in Indonesia with a curry. Marina this is pretty mild.

You've been out buying special jars for this one Katie - where did you pick them up? I noticed my jar was amongst that lot ;)
-
Not new jars Judy, I had them for ages.
They are like these:

I picked them up at Gagonis Bros.
I recylce them and have used them a lot, I do buy new lids for them though.
Yes your jar is there ;D ;D
-
Thanks Katie, I hadn't forgotten you promised me one :-* :-*

I love these jars.
This is a good deal, Katiej. I've seen this size jar for $6-7+ each in some of the specialty stores.
I recently picked up a box of 4 X 250 ml (I think that's the size you have) - 4 X 500 ml, 8 lids, a funnel and a recipe book for $29.95 from Everten - they were on special back in September but it looks as though thery're still there.

They are great jars Goldfish ;D
I've previously bought that box you mentioned - the funnel is particularly handy. PoK have it at the moment for $24.00. Their prices are cheaper than I've seen before.
I have lots of the 500ml jars as well as the 250ml ones, but I'm thinking though I may have to order more ;D
-
;D ;D Well now I've seen that, Katiej - I think maybe I'll be needing more than I thought!! ;D ;D
-
I'm finding them hard to resist ;D
If you don't need the funnel goldfish, a better buy would be the six 250ml jars at $14 and the six 500ml jars at $14 - that way you'd get 12 jars for $28 (compared to the $24 starter pack with 8 jars).
-
K Mart have similar jars for $1 for 250mls and $2. for 500 mls I bough the big ones for my sour dough.

Wow they look very professional Katie ;D
-
Yes don't they look good. :D I bought that starter pack a few weeks ago too, lovely jars and good size too. :)
-
Making now, seems Very SHARP. , does it need more sugar, did not pack cups?THANKS
-
DJ I haven't made this recipe but I measured out 1 cup of granulated sugar for you and it weighed 210grams.I hope this helps your dilemma.
-
Thanks, I added a bit more. All done now! Made 9 jars.
Fingers crossed it will popular.
Thx x
-
DJ, it is a sweet/sour condiment. People I gave it to last year have asked for more this year. Hope you like it.
-
Thanks chookie. I did not pack the cups with sugar, so just added a bit more as it seemed so sharp. Got 9 pressies and a bit for us to try.
Caramelised onion marmalade next, and thermofest mustard. Fudge too.
Done 7 dishcloths so far too, need more cotton to knit with?
Got family to give to, and also friends and now people at work, but just a token thing for them.
-
All sounds good DJ.
-
Chookie we tasted our mustard fruits at lunch today (with a loaf of Vienna bread and our freshly opened leg ham).
We both loved it ;D It's delicious, thank you for another great recipe.
-
Katie, glad you and DH like it.
