Oaty Jam Drops Makes 32 average size biscuits
Ingredients:
70g rolled oats (or any other rolled grain such as barley or rye)
150g plain flour
1/2 tsp baking powder
20g desiccated coconut
200g brown sugar
125g butter
1 egg
2 tsp vanilla
Jam (I used strawberry)
Method:
1. Preheat oven to 180 degrees and line oven trays with paper.
2. Mill half the grain (35g) for 10 seconds/speed 9-10 or until fine.
3. Add flour, baking powder, coconut, sugar and remaining grain and mix for 10-15 seconds/speed 3.
4. Melt butter in microwave. With TMX running on reverse + speed 2, add melted butter, egg and vanilla through lid. Continue to mix for a few seconds, then scrape down sides of bowl and mix again.
5. Roll teaspoons of mixture into ball, flatten slightly on trays and press a hole in the centre of each. Spoon a little jam into each hole and bake for 10 minutes or until lightly brown.
