Title: No wine risotto?

I have a friend who is vegetarian and also can't have alcohol. Does anyone have a vegetarian risotto recipe without wine or know if it is possible to leave the wine altogether and just add some extra water to a regular recipe?

I don't always add the wine to my mushroom risotto,I  just make up the difference with water xx

I never use wine in my risottos because none of us drink :-))

I just make up the liquid with extra stock. Either chicken, beef or vegetable depending on the risotto ;)

Ditto.  I often make risotto without the wine and just add extra stock instead.

I rarely add the wine and often forget to add extra stock / water and it is fine.

I have use a SMIDGE of apple cider vinegar to give it that vinegary zing and then water. Works well.

Can use lemon juice.  Did so today and it was very nice.  I was inspired by the photo JulieO posted and made my own recipe up for Lemon risotto with garlic and chilli prawns.  I was delicious and i was going to post but got carried away in the garden. Must say,  it didn't look as good as JulieO's.
