Hi there
I've made the vegetarian nut paste quite a lot and love it
I just want to make plain almond butter
Iv'e only found this recipe which seems a little ..... odd. has anyone tried it and has it worked? Are you meant to Keep the timer going and temp at 37 while you carry out the rest of the step?

Sals, I've sent you a couple of links to other blogs which have recipes for nut butter.

Sals, I guess this is because it's a "raw" recipe and so the temperature shouldn't go so high that the enzymes/nutrients etc are "cooked". The 37 just helps you to keep an eye on the temp.
I haven't made almond butter but I know that peanuts get quite warm when grinding to make peanut butter. So if you're not to bothered about your almond butter being raw, just grind away until it's at the consistency you like. I start at speed 8 until the nuts are pulverised and clumping then drop scrape down and continue grinding at speed 4/5 till desired consistency.

I also need to make some almond butter for a recipe. Has anyone got a quick and simple recipe?

I've never used a recipe to make almond butter - I just grind them until they are the consistency I want. If I need to loosen the paste up a little I add a bit of neutral oil, like rice bran oil.
That's all there is to it. :)
