Just wondering what everyone does with their Brioche dough? I made a sweet plaited loaf with raisins and cinnamon. Just wondering what else can be done with it? What is your fave thing to do with it? It is so easy to make I am quite taken with it!

Oh Judy you have GOT to try it! Honestly....so easy! I have been using the back of my warmed car let my dough rise as it has been quite cold here in Perth! I'm just about to ice my plait and then put sprinkles on. Hubby has take the kids across the road to the out door movies that they have on the Oval provided by our local Council and we are just waiting on the brioche and the gluten free goodies.

The Bee sting Buns (http://www.forumthermomix.com/index.php?topic=9442.0) are based on a Brioche dough. I have posted on here but on the iPad so can't link at the moment.

I haven't made the brioche dough but what about using it for sweet scrolls like cinnamon scrolls, apple and walnut scrolls etc

I made my Custard scrolls and Apple and Cinnamin scrolls using the Broiche dough, I doubled the yeast, as in the EDC on the opposite page is Easter Buns and they have more yeast, (the fresh yeast is same but dry different, so I went with more)..they were delicious.

I'm also planning to make custard scrolls (http://www.forumthermomix.com/index.php?topic=2191.0) with it :) I think cookie or chookie posted a recipe on here for them.

Thanks guys! Will have a play around. It went very quickly last night! We got descended on by quite a few kids and families asking for more! It was definitely a success! Luckily it makes a lot ;)

Ok, so JD kindly directed me to a thread in another topic and in there I found this delicious looking loaf made out of brioche dough - blueberry and lemon curd loaf.

Jen I can't believe you didn't take a photo - it looks positively photogenic in that blog!!! But did it turn out ok - any modifications needed?
Nighteyes you had better take a photo of yours. I'm going to try and make on Tuesday - we will see if DS behaves himself.

Just made the blueberry lemon curd loaf this morning. Unfortunately I think I put too much curd in and quite a bit leaked out but it still looks delicious - cant wait to try! The kids are going to be happy when they get home from school this afternoon!

It would have looked neater if I turned my seam under but I didn't really think about it! I didn't put much lemon butter in it because I was worried about it slipping out. It still tasted nice though :) Will try more next time...and trust me...there will be a next time! ;D and again...and again...

I used the EDC brioche dough for my almond and custard scrolls. I think anything sweet would be lovely.

It tasted yum! Can't wait to try the custard and almond scrolls! I made some yummy Strawberry and Vanilla Bean Jam the other day. Might try a scroll with that and roll it in sugar when done!
I think I needed to cut the dough a bit deeper. I didn't rest it for very long as i was in a rush but it still turned out well :)

I use the broiche dough recipe for sweet scrolls too, even just cinnamon and sugar is nice! :D Stewed apple scrolls are always well recieved by my girls too. :)

Night eyes Fitz , I have made some of that strawberry, vanilla bean jam today also, the smell is wonderful and the taste divine, sounds like a nice idea making rolls with it.

Made a batch of EDC brioche tonight with a real mix of flour as have finally emptied the flour cupboard.
Seeded granary, strong white, whole meal and 00. Hope it is not too heavy. Doing overnight rise in fridge.
Soaking posh raisins overnight with orange zest, juice, and orange flower water.
Will add cinnamon and spices tomorrow and try to make a Christmassy bread to take with me out to lunch.
Will try to photo and report IDC.

This was a hit a mix of flours inc wholemeal and granary.
But would a ke again with white flour too and vary flavours depending n seasons.
Used paper muffin cases and made 24. This is portion control and also useful for visitors and no wastage.
After overnight rise in fridge, knocked back and brought to room temp. Rolled out to large rectangle.
Brushed with melted butter.
Sprinkled with Demerara sugar, cinnamon and mixed spice. Spread soaked mixed fruits on top.
Rolled up the shortest width to make long sausage.
Cut into 24 pieces.
Put in paper cases.
Proved approx 40 mins in warm sunlight room (winter here)
Baked 18to 20 mins
Oven at 230 then put in and turn down to 200.
Drizzle icing when cold. Yummo.

DJ what a brilliant idea to do them smaller. They look so lovely I'd be eating too much if it was a large one. But then I would still eat lots of the smaller ones. ;D

Freeze brilliantly, take out one at time to have with cuppa.
Portion control for DH, without him knowing!
They totally fill the muffin cases as they prove and bake.
