can you overcook bread??
my oven is dodgy and only a few months old, I'm awaiting a replacement however, in the interim, I'm cooking bread tonight and it's been in for 45 minutes now, not as dark a crust as I'd like and wonder if I can overcook it...

Does it sound hollow when you tap the bottom of it curly?  Which recipe are you doing?

I'm doing the artisan 5 minutes with a 48 hr starter done in thermie......... it's an hour now, was too scared to take it out and tap it..

took it out after your question... definitely hollow when knocked on the bottom...  just seems like a half hour more than suggested

If its burnt.... you may have cooked it a little too long ;D

OMG the thermometer... I have one and completely forgot that I could test it for internal temp!!
