Inspired by Neil Perry
Into TMX bowl place in the following order.
250g white rice.
350 g boiling water
120g coconut milk or cream.
Cook 5 mins on Varoma temp, (or until it boils )
:-: ^^.
Turn off, cover with Tea towel and leave for 25 mins.
Fluff with fork.
Serve with Asian or Indian food.
Can add salt and other spices if desired

Thanks for posting this , I'm going to make it and surprise my DIL when she is next up. Last weekend she made some amazing Pad Thai and Tom Yum Goong, she has the recipes in her head and just adds this and that, I try to watch her and see what she is doing, but usually i am entertaining 2 year old GS while she is cooking.

This has a very mild rice. Flavour. Good if you don't want to over power the dish it is served with. Could double the coconut milk/ cream and reduce the water by this amount.
-
making curry 2morrow nite, this will be perfect. thanks :-*
-
Thanks Chookie. I will try this when I next make a curry too. :D
-
ACW would u recommend making it just b4 dinner or ok just to reheat it
-
Thats a different way to cook the rice. I always put it in the basket & add the coconut milk to the bowl & cook for 9 mins. Will give this a go.
H :)
-
Uni, I made it yesterday to reheat in Microwave for Dinner tonight. If you like a stronger coconut flavour, I would double the coconut milk or cream.
Hally, I always cook my rice this way.
-
will the rice soak up the extra milk, i was thinking of blitzing some shredded coconut and add that while its cooking
-
There should be 470/80 of liquid. I think roasted coconut would be nice.
-
acw you said to double the coconut milk that would bring the liquid up to 590
-
480 is plenty.
-
This sounds the perfect accompaniment for a curry, thanks Chookie.
-
Dumb question. Does putting the rice straight in the bowl chop it up while it's cooking or is it still nice and fluffy as it is when you cook in basket.
-
You are only cooking it for 5 minutes GHM, it is the resting time that does the bulk of the cooking. I can assure you it is not chopped up though, give it a try.
-
GHM its the only way i cook rice now
