Title: Root Vegie Mash

Serves 4

Ingredients:
300g pumpkin, chopped
2 carrots, sliced thickly
1 parsnip, sliced thickly
1 swede, chopped
1 sweet potato, chopped thickly
freshly ground black pepper


Preparation:
Chop the vegetables fairly uniform in size so they will cook evenly at the same time.
Add about 1 litre of water to the TM jug and place vegetables on top in the Varoma.
Steam for approx 35 mins, Varoma, Speed 1 or until all vegetables are cooked through.
When cooked transfer to the jug, add Butterfly and mash for 20-30 seconds, Speed 3-4 until smooth.
Add pepper to taste, and serve hot.

I love this sort of mash!  Thanks for posting the recipe.

Also, cook some rice in the jug for another time whilst the veges are cooking

Yes, never waste a cm of the TMX if you can. 

This recipe must be really nice for you to post it CP, was it an idea of yours or did you see or taste it somewhere?

Yum we have this a lot, known as Hutspot or Stamppot  and I also steam a Rookwurst sausage with the veggies to make an authentic Dutch Meal.

We had this last week from an energy diet book that my DD is forcing me to eat from. There is quite a lot of nice food in there actually, but there is some things that I just can't eat. I really liked this as it had a lot of flavour from the veges and you are also not using dairy in the mash.

I've made this a couple of times now.  Added a pinch of salt as well as some of the liquid left in the jug to help with the mashing.

Glad you enjoyed it cookie. Good thing too is it doesn't use butter or milk like normal mash.

Nice one CP, very tasty but next time I will have to pay more attention to how I cut my pieces as some weren't cooked and I couldn't wait any longer  :-))
