Title: Carrot muffin recipe?

I am after a carrot muffin recipe (like carrot cake) with visible carrot in the muffin... if that is possible in a TMX - I have seen muffins before with shredded carrot.

I have tried a search on the forum but came up only with a raw carrot cake which is more complicated than I'd like.

There are lots of Carrot Cake recipes here on the forum.Just be sure you are on the Home Page when you type in Carrot Cake in the Search Box ;)
Otherwise here is a recipe Judy highly recommends for Carrot Muffins by Brazen20au (http://www.forumthermomix.com/index.php?topic=1025.0).Just substitute ordinary flour for the gluten free flour.
I like the Carribean cake from the EDC and can't see why you couldn't make muffins instead of a cake.Just reduce the cooking time. :)

Also the Carrot and Apple Cake from Devil of a Cookbook might give you what you are looking for, sunnyzoë, if you have that one.  Welcome to the forum, by the way.  :)

Ah - I feel silly now! I didn't realise that... but I was very suprised when not much came up in the search - I must have been in the raw food forum!

Thanks so much for both replies, now I can search the forum properly and I'm sure I will have lots to choose from!
