Thanks everyone. I hadn't  noticed what a great photo it is of DS, he certainly looks proud. The cake board came home with just the spine left on it so not much left over which is great, we aren'g big cake eaters and I also made our cupcakes for the kids lunches for the week so any leftovers from this would end up in the bin.

Not a celebration cake but one for a party. Compared to some on here it is very plain.

Martha Stewart's yellow celebration cake recipe made in kenwood mixer. A sponge mix with added milk. Baked in two tins and split in half.
Cream cheese frosting. Cake frozen for ease of handling and assembled while frozen. Fridged  overnight to harden icing.

4 layers of cake, two with fresh cut strawbs and frosting,  centre one with strawb jam and frosting.

Ummm. excuse me! I don't think so, DJ!!  If it's not a celebration cake, it sure looks like a cause for a celebration!!  It looks fabulous!!  Thanks for the tips on the freezing/refigeration etc. . . . have made a note of that!!  (I'm a rank amateur in the cake making dept - come to think of it, in a lot of other depts. too!! ;D ;D)

Thanks all, it was a big hit, we had it at the end of the races with a welcome cup of tea.
There were only two slices left and we have them away as couldn't bring home on the train  :D

It lasted fine too and I'd made a cool box out of foil in a cardboard box and chilly packs as it was a sunny day and made from cream cheese.

Next time I'd put sliced strawbs on all 3 inside layers. The jam and frosting layer sort of disappeared.

I didn't use my usual non TMX sponge as I needed a strong sponge to cope with four layers and fresh strawbs.

It's so good when an idea works.

Apart from buying from a person who makes cakes, does anyone know where you can buy cheap cardboard cake boxes (in different sizes). And approx cost?

Thanks obbie ill have a look. I won't need a huge quantity as its just for when you need to take a dessert etc somewhere and don't want to worry about having to remember to bring the plastic container home ( such a hassle)

No idea, got the photo from their Facebook page as they do these cakes on commission - probably for a friend/relatives birthday. DD19 says they can't face eating the cake as they are " so over" cake and icing by the time they've finished the project. They have done some 3D models as well, most recently a character from Pokemon, but prefer flatter projects. I'll have to post a photo of the cake they put together for DD's 18th birthday. - an alien  v zombies theme. So much fondant!!
