Title: Tenina's Caramelised Garlic Paste
Post by: josephinef on August 11, 2012, 08:41:42 am
This recipe sounds amazing, unfortunately though her book "For Foods Sake" is not available at the moment. I definitely want to buy it when it is reprinted. In the meantime, is there anyone out there who is willing to post the recipe for the Caramelised Garlic Paste?

Hi JosephineF, For Food's Sake (second edition) is released now.  That recipe is beautiful.

I think the book is now available, but this recipe is actually on Tenina's website as a component of a tart:  http://tenina.com/2011/08/caramelised-garlic-tart-hotmixpro-thermomix/  .  I am not sure if it's exactly the same, but I have some cooking now. Enjoy!

If a recipe calls for garlic I use that instead in most instances GHM, I've used it on bruschetta instead of raw garlic, add it as a flavour boost to anything savoury (gravies, sauces) whether it calls for garlic or not. It is so easy to make.

So if you were making a dish that requires sautéing  onions and garlic would you use the caramelised paste instead of crushed garlic cloves Judy? Like in casseroles, curries, pasta sauces etc?

I was gifted the book last week JD so will make this sometime this week. I imagine it would give a better depth of flavour than just sautéing raw garlic.  ???

Yes it does, I use between 1/2 - 1 tsp per recipe.

Thanks JD sounds good.
I use a lot of garlic and onions and this would be handy to have in the fridge :)

just finished my paste,  bit disappointed that the recipe doesn't state how much it makes.  All I got was half a small jar as in the photo, seems like a lot of work for such a small amount as it was a bit fiddly squishing out the cloves.  If I had known this before I would have doubled it at least, as I got a huge bag of garlic from markets today for $2 (http://img.tapatalk.com/d/12/11/04/ezysa5a8.jpg)
