Scalloped Corn
Serves 4 at least
1 small onion quartered
Wedge of red or green capiscum
1/2 tbs butter
1/2 tbs oil
1/2 tsp paprika
1/2 tsp mustard
90 gms flour
salt
pepper
1 cup milk
1 egg
1 can corn or creamed corn
Put onion capiscum in *: chop 5 for 3 seconds
Add butter and oil. 3 minutes 100 and :-: speed 1
Add flour and seasonings . 3 minutes 100 :-: speed 1
Add milk 3 minutes 100 :-: speed 1
Add corn and egg 5 seconds :-: speed 4
Pour into oven proof dish and bake at 160 or so for 20 to 30 minutes.
You could top with breadcrumbs
After tasting I remembered that it was very bland so probably why I liked it as a kid but it was insipid so I added a 1/2 tsp dried chilli flakes.
I adapted this from my more than 50 year old betty Crocker Cookbook which is one of the few I have kept over the years.
When it is out of the oven I will post a pic with Tapatalk.

I wouldn't t be in a hurry cookie 1. It is pretty ordinary. Like I said kids would like it for something different.
I have two orchids from the same plant. I ignore it completely but it still keeps producing every few months.

Ate it with the chicken and a very colourful red cabbage lettuce, feta and olive salad. DH loved the b****y corn. I put a fair amount of chilli in it though. Hope he doesn't ask for a repeat.

I made this as an accompaniment for DS birthday lunch. I added extra mustard, paprika and added the chilli flakes.
It wasn't bland at all. I had a 9yr old and 5 yr old as well as kids in their early 20's plus adults and they all enjoyed it with the lamb done on the bbq. :D

I'm in the middle of making this, and as usual, didn't read through the recipe. I can't find any mention of flour in the ingredients. How much flour should I add?

Thanks, Gert. I just tipped some in and it seemed to work OK. I also added garlic, ginger, turmeric and lots of chilli as I'm addicted to these flavours. I should have added some salt.
