Piņa Colada
Serves 6
Ingredients
500g Ice
350g fresh pineapple or 1 tin 500g pineapple in juice
150g sugar
1 tin coconut milk
100-200g rum
dessicated coconut to decorate glasses
Place ice, pineapple and sugar in THX. Blitz from 5 to 10 for 2 mins.
Add coconut milk, rum and mix 5 seconds Speed 3
Wet rims of glasses with water, and put upside down on a saucer with coconut on, to decorate.

We made this to kick of a demo last week ;) ;D and I would suggest the following alterations:
Grind sugar speed 10 for 10 seconds,
Add ice & pineapple and blitz on speed 10 for 1 minute.
then continue as per Brons instructions.
Sooooo nice!! A few girlfriends have been discussing a cocktail or more of a pina colada night (after smelling an enjo coconut & lime candle :-)) ) so this is definitly going into the diary now!! Thanks Bron :-*

The perfect summer drink.
I followed ILB direction of grinding sugar first, then adding the ice & pineapple (I used the tinned pineapple).
The first jug had 200g bacardi rum, then 2nd jug I added 300g ;)

Well following ilb tweaks as per maddys suggestions. I read maddy put 330 of rum, i have some malibu as well so was going to do 200 rum & 50 malibu.
Have fresh pineapple in the fridge to go.

They were nice with fresh, havent tried tinned.
