Quinoa and Vegetable Bake:
Number of People 6:
Ingredients:
Bag of spinach
1 onion
2 cloves garlic
1 zucchini
1 carrot
1 red capsicum
handful of semi sundried tomatoes
handful of fresh herbs
1 cup of uncooked quinoa
1 cup cottage or ricotta cheese
2 eggs
1 tablespoon EVOO
Preparation:
Set oven to 1800
Soak quinoa in water to cover it for at least 30 minutes.
Drain and place in basket, add 1 litre of water to the bowl, replace basket and steam for 15 minutes/100/speed2.
Set aside.
Place the vegetables into the bowl and blitz until how you like them. I do it in spurts of 1 second on about speed 4/5 until I have the size I want.
Add oil and saute at 100 degrees/3-4 minutes/speed 2.
Add herbs, quinoa, cheese and eggs to bowl.
Mix at :-: /speed 3/10 seconds.
Place into a greased dish and bake at 1800 for about 60 minutes.

I found this on the Taste.com site and gave it a try. It's very nice as a side dish.

Thanks for sharing the recipe, Cookie. Might give this a go at the weekend. Did the quinoa drop through the holes in the basket? Might mix it with rice. did all those veges fit into the bowl at once??? I'll have to make this with soft tofu, as opposed to cottage or ricotta cheese, but I think that should work OK as all three have a fairly bland'ish taste.

The quinoa didn't drop through the basket at all. I only made a half quantity but I think you should be right with the veggies. Give it a try. We really enjoyed it.

I made this yesterday and was disappointed - I think using the tofu just didn't give it enough flavour and I think mine would have benefited from cheese on top as well, but having to make a lactose free version didn't work. Anyway, most of it is in the freezer now and I'll see how it tastes next week.

That is disappointing. Perhaps you could serve it with something that would have the flavour and it could be the flavourless side dish.

Yes, I also saw that recipe on the taste website and have made it a couple of times. Had it last night actually!
When cooking the quinoa, I saute some minced garlic first, then add the water with the garlic and cook the quinoa in that to give it a bit more flavour. I do lose a little bit of the quinoa through the basket holes, but not much.
I also add a sprinkle of cheese on top in the last 20 minutes
I like my vegies chunky in it though so just chop by hand and fry in the frypan.

Thanks for that. I'll try the garlic next time or use Tenina's garlic paste.
