I had these on saturday night at a function.  Yum. Googled a few recipes, but was hoping someone might have the perfect recipe for me to try,

The empanada dough is in the budget busters booket Hally - I think it is for a tuna empanada but you could make your own beef filling.  I found filling  (http://mexicanfood.about.com/od/authenticfamilyrecipes/r/beefempanada.htm) one on google.

Thanks JD, I have the budget book, will look at that. The fillings seem to really vary.
