Title: Cucumber relish

I'm putting this recipe in this section, but it equally could go in the main recipe section.  Very nice to have served cold with a curry as a side dish.

1/2 cup white vinegar
1/2 cup sugar
dash of fish sauce
1 long continental cucumber, peeled and with the seeds scraped out
1/2 cup roasted peanuts
1 red chilli
2-3 sprigs coriander, leaves and stems

Cook vinegar and sugar on 100 C speed 4 for 5 minutes, pour into a bowl and add fish sauce
Let TMX cool for a few minutes
Add peanuts, pulse on turbo 2-3 times until chopped roughly
Add cucumber in pieces, chilli (minus seeds) and coriander pulse on turbo until roughly chopped
Pour back sugar syrup and mix briefly at slow speed until mixed
Refrigerate until needed

I've made this for years, and it takes ages to chop the cucumber into nice little squares.  This version is a bit more finely chopped, but still makes a lovely fresh relish which goes really well with curries, especially chicken ones.

I've kept the relish for a couple of weeks, sadly the curry is all gone.....
