Title: JulieO's Pressure Cooker Crispy Potato & Beef Pie

CRISPY POTATO & BEEF PIE
2 tbsp olive oil
1kg beef chuck steak, cut into 3cm pieces
1 large brown onion, cut into wedges
4 bacon rashers, coarsely chopped
2 garlic cloves, crushed
200g button mushrooms, thickly sliced (used egg slicer)
½ cup red wine
400g can Heinz Big Red tomato soup
2 cups beef stock
1 cube umami paste
sprinkle chicken granules
2-3 small desiree potatoes, very thinly sliced (used v slicer)
50g butter, melted
Thyme sprigs
Steamed peas, to serve
 
Heat half the oil in a pc over high heat. Add ¼ of the beef and cook turning occasionally, for a few mins until brown all over. Transfer to a bowl with a slotted spoonl. Repeat in 3 more batches with remaining beef.

Turn down heat slightly and heat remaining oil in the pot. Add the onion and bacon and cook stirring, for 5 mins or until onion softens.
Add the mushrooms and cook for 5 mins or until tender.
Add garlic and cook stirring for only 20-30 secs until aromatic.
Add the beef back in and any juices, along with the wine, tomato soup, stock, umami and granules.  Give a good stir, cover with lid and bring to high pressure over high heat.  Once stabilised, cook 25 mins.  Preheat oven 220C.

Release pressure using nrm.

Spoon into individual dishes. (ones not needed can be frozen for another time).
Combine the potato and melted butter in a large bowl. Season well with salt and pepper. Arrange the potato slices over the beef. Sprinkle with thyme leaves.
Bake in the oven for 30 minutes or until potatoes are golden brown and crispy.

It does. I'd do it in the oven or stove top as I'm scaredf of pressure cookers and won't buy one. :-\

Will remember the butter and sliced potatoes to,use on other things. Mince, leftover meat and gravy from a roast etc..

I made this a couple of nights ago- it was a winner.

The left overs would have made a great pie filling but I took the left overs to work and we had it on toast.  Someone asked for the recipe and I found your link to the non TMX version.

On no that photo makes me want to go out and buy a pressure cooker which up until now I have had no desire for :o :o :o

Shhhhh H, I don't need to hear that  :D  DH was watching a cooking show the other day and they used one and he mentioned how his mother had one and I could see the cogs working but I chose to ignore him  :P

Just for interest sake, you understand, what brand is yours?

I bought the cuisineart 6l electric pressure cooker. I dont know but I think the electric ones are easier to use, its all automatic.

You know the cooking equipment is never over, TM was meant tbe the last item. :D

Yes that is what I tell myself and as I work from home I can easily make stews etc. in my slow cooker  :-\

Made this tonight in the new stove top PC and I had way too much liquid, I thickened it a little with some cornflour and also tried to reduce a little but still ended up taking out a mug full before putting potato on top. It was a big hit tonight and will definitely make it again, it had such a lovely flavour.

We are having this tonight. I reduced the liquid so there wasn't as much to reduce but still found we needed to add some cornflour. I prepared it last night in the bowl of th PC but wanted to go to bed early so put the bowl in the fridge and then cooked it this morning. DH will put teh potato on tonight and put in the oven to brown. The casserole has such a lovely flavour and smelt great this morning. Can't wait to get home from work for tea.
