Have allergy to Parmesan and all cooked cheese, so do we just leave out?

Yes leave it out. You could add mushrooms, cooked or uncooked to the paste. Are there uncooked cheeses you are good with?

I sometimes eat a wee bit of mild cheddar, or locally made Mutchli (Swiss type) or Philly/mascarpone/ricotta/cottage cheeses.
Never strong cheese, never Brie type or blue type.
I guess the effects of the cooked cheese and Parmesan making me very sick has put me off cheese in general. Thanks for asking.

Probably none of those cheeses are suitable in Umami, so just go with the mushrooms! Let me know if that works for you taste wise!!

Thank you for posting this - so nice to have a demonstration. I have made the Umami paste but with only two of us (and one not very adventurous) I ended up throwing some of it out as it went mouldy. Never thought to freeze it but will make another batch this afternoon and keep a small jar in fridge and then freeze the remainder.

I put mine into an ice cube tray and turned them out. So now all I have to do is get an ice cube of Unami out of the freezer.

How long does it keep?

TL it doesn't keep that long even though it is refrigerated, I put half in the freezer last time, when that is finished and I make the next batch I'm going to put in the ice cube trays and freeze the lot as my refrigerated lot went mouldy again, I forget to use it.

I put mine into ice cube trays and freeze it. I then turn the cubes out and put them in a zip lock bag.

Do you use it sparingly or like you would use stock paste? Because my veggie stock paste goes into anything and is used up within 2 weeks. I am just asking because my freezer is filling up fast at the moment!
