Title: Light and airy Yoghurt pikelets

Ingredients

4 eggs (separated)
50 g sugar
500g yoghurt (any flavor)
60g melted butter
210 g plain flour
2 tsp baking powder
1 tsp baking soda
1/4 tsp salt

Make sure TM bowl is clean and dry.
Insert butterfly in TM, add egg whites, whip 2 minutes speed 4 until egg whites are fluffy.
Remove butterfly (but don't wash) and place egg whites aside in another bowl.
Place butterfly back into TM, now add egg yolks and sugar, whip 1 minute speed 4.
Now add melted butter (I melted in microwave) and yoghurt, mix 10 seconds speed 4.
Add flour, baking powder, baking soda and salt and mix 10 seconds speed 3.
Add egg whites and fold in gently with spatula until just combined.
Cook spoon full in medium hot pan and turn once bubbles form on top of pikelets  

This mixture is quiet thick so needs spreading out a little with back of spoon.
I used Honey Buzz yoghurt today and the kids loved them.

Look great Dede,

Do you cook one pikelet at a time. I just cant seem to cook pikelets :(

I cooked them on my new George foreman griddle and managed to have about 6 cooking at once. But if I used a frying pan I would only cook one at a time.
I had a few odd shaped ones but the kids ate those.
These are really yummy :D
