I have a recipe for a strawberry semifreddo and the recipes says
place the egg, egg yolks, vanilla and sugar in a heatproof bowl over a saucepan of simmering water and using a handheld electric mixer, beat for 6-8 mins or until thick. Remove from heat and beat for a further 6-8 mins until cool
Any ideas on how to do that in the TM?

Sounds like a custard. Maybe follow that recipe with the butterfly.

Here's (http://whatcarolinecooked.blogspot.com.au/2012/04/raspberry-fruity-dream.html) a raspberry semifreddo in the TMX but only uses egg white - is this the sort of end product you are looking for Kayc?
