I will try to be as restrained as possible in letting you know about this fab soup - quick (10 mins), simple (ingredients on hand, not a lot to prepare) and delicious. It made 5 adult portions of a small deep soup-bowl. DH, who is as quiet and understated as I am generally enthusiastic, pronounced after the first mouthful "Very nice". After the second helping, he was making suggestions about ways to extend it with chopped, grilled bacon or various cheeses. After the third helping, he sat back and reflected - "Well, that was very nice soup. You could serve that to anybody. So quick and easy - easy for me to say, but you seemed to throw it together in no time."
What we particularly liked about this soup was the contrast of the bitey onion and chilli (I didn't deseed it), the flavoursome tomato/capsicum/veg stock concentrate combo, and the whole cannellini beans.
No tweaks necessary. An excellent recipe. A wonderful soup. Thank you.

Hold on Ros didn't you say that DH was making suggestions on ways to extend it? Obviously he felt it was lacking.
Then you say no tweaks necessary . Which is it? This is not a Fiona Hoskin recipe but one from Joanna Stronach customer TAS

Made this soup tonight as I had some tomatoes that were close to throwing out.
Very easy and tasty soup to make.
Had all the ingredients in the fridge and pantry.
Husband and kids also ate it.
I wouldn't change a thing.

Made this soup last week, the attraction being how quick it was to make ;D
It was very quick and easy, and we enjoyed it.
Next time I make it I might dice some extra veggies and put them in the thermoserver, then pour the cooked soup over and let it sit for a while to "cook" the veggies, and make it a more hearty meal.
