Hi all.
I made the garlic rosemary pizza dough by Louise Fulton n Lucy Nunes (from youtube video).
I followed all the instructions and even buy exactly the same brand of bread n pizza flour shown on video. It all look very easy. I dont know where i messed it up.... 😰
It is very sticky and definitely not smooth and pluable as shown on video (youtube).
Although i let my dough to rise for over 4 hrs (instead of 90mins like it said in video). I've got distracted by my boys. But it's quite a cold morning this morning. Can that be the problem?? Is there such thing as over proofing dough?? Will it make it sticky???
Or is it not enough kneading??? Can i put the dough back in tmx to knead some more???
Help!!! Orherwise we'll have only pizza sauce for dinner tonight, and no pizza ... 😁

I cant wait....
So i knead the dough by hand and smack it against the table for further 5 mins. Adding copius amount of flour in between... Still very sticky. finally i gave up and add olive oil and re-wrapped in the baking mat, and started praying to all the pizza gods up there.
Should i do that?? Re-knead i mean??? Will that improve the dough??
Arggggghhhh....
How can i mess up such a simple recipe?? The way louise Fulton and Lucy Nunes do it seems idiot-proof!!! 😓😓😓
-
frazzled mom, maybe 4 hours was to long to let it rise and also i only do 1 rise for pizza
-
Argh. So no way to salvage the dough??? 😭😭
-
maybe try and make a focaccia with it.

Are you 100% sure the liquid quantities used were right? Normally you can fix mildly sticky dough with a little extra flour and some kneading. :)
-
i was thinking the same CG
do u have a fav bread dough MOM, i have used the no fuss bread dough a few times with great results
-
I've made this one before. This is what I wrote down:
Blitz 2 garlic cloves, 2 tablespoons rosemary
Add 280g water
20g EVOO
7g dried yeast
2 tsp salt
500g flour
Mix Sp6 10 secs
2 Mins kneading & shape
Wrap it up for 90 mins or until doubled in size
You oil your hands and the pizza dish.
If you don't have any flour to start again, just add a bit more flour I suppose and use them without further rising. Better than nothing, and I'm sure being pizza they will be fine. I must say tho that I always use my bread/bakers flour which is OO
-
It will be fine. Follow the suggestions below. I sometimes just use Isi's Portuguese Bread roll recipe for pizza because it is never fail and too easy.

Yeah i put so much olive oil and extra flour, it stopped being sticky. Desperate last attempt to salvage the dough....
I'll bake it tonight as is. And hopefully it is still edible somewhat. I was told pizza dough is a very forgiving dough. Hopefully this is the case with mine.
I'll keep u updated on the result tonight 😳
Thank you for advice and help ladies!! 😊

Cream puff, i think thats the recipe i was using this morning. All the ingredients look the same. I mean it looks fool-proof. But i somehow mess it up.... 😁😁
I'm not giving up. I'll try again next week!! *determined* 😠

You may have done what I did the other day when I was making bread dough. I accidentally had the lead hitched under one of the feet of the TMX so the measurements were wrong. I realised a bit too late to salvage the bread I was making so started off on an experimental route. Ended up with a fantastic loaf which I now cannot replicate!
Two pizza recipes I have had great luck with are Tenina's in her book For Food's Sake and also the thin and crispy pizza dough http://www.forumthermomix.com/index.php?topic=3491.0 (http://www.forumthermomix.com/index.php?topic=3491.0) (hope that link works).
I've learnt a lesson from my mistake to always check the lead when measuring ingredients.

Brumington itis usually something simple to explain it I i have done the same thin by having one leg on the sink rather than the counter. I usually is not the recipe but the cook eh?

So true Gert!

Hahaha. Yeah i might've done that. I didnt check the lead or anything like i normally do. My 4-year-old son helped me. So i was distracted watching him. So that might be it. 😁
However the pizza turn out alright. DH demolished them 😊
I guess what they say abt pizza dough is quite forgiving is true, cos believe me i abused that dough quite a bit today. How it still turned out to be quite yummy, i've got no clue 😁

I'm so glad it turned out Ok for you FM - it's a nice looking pizza.
-
It certainly is. Perhaps try Isi's dough next time or Chookie's no fuss rolls.
-
Looks great frazzled mum - glad it worked out for you in the end. ;D
(oh and hope you are not so frazzled now. ;) )
