Hi guys,
I want to be able to bake fresh rolls for our lunch each night - but there are only 2 of us so I only need to bake 2 or 3 at a time. Can I mix up a dough and just leave it in the fridge and use what I need on a daily basis? Or will the dough go funny?
I'm not a great bread maker - so thanks in advance for your help!

i have done the no knead dough bread and only bake what i need for that day ,this dough can be left in the fridge for 14days

this is the recipe that i use
3 cups of luke warm water
1 1/2 tbl yeast
1 1/2 salt
6 1/2 cups of flour
mix in a platic container with a wooden spoon leave to rise for 2 hours then bake or refrigerate

sorry shan i just reread your Q and i am thinking these roll would not be suitable for taking to work for lunch
why not do a 1/2 a batch of the no fuss recipe

Shan, might be better to par bake a full batch, freeze , and then finish off the day required. Not perfect, but best I can think of.

Hi, you could par bake the ones you don't want to eat and then freeze them. You then finish cooking them when you want them. HTH, Natalia

this dough i mixed yesterday afternoon, placed in the fridge and let it rise over night, i baked the loaf this morning and have the other 1/2 of the dough in a tin loaf which i will bake tomorrow morning or night
