Hi everyone. I made a torte caprese last night to take to a meeting at work to send off a pregnant colleague. However, it sunk in the middle. I've put ganache over the whole thing anyway but it looks a bit weird.
Would it be ok to cot off the raised bits around the outside and put some more ganache over it? Would the cake go soggy??
Argh!!! Hope someone knows...

Not too sure . . .I'd be inclined to throw some strawberries, blueberries, etc over the top just to cover up the hollow . . . .I'm sure it will taste fine . . .Actually, come to think of it, mine have "slightly indented" in the middle too . . . . I certainly wouldn't worry!! Good luck!!

I like both suggestions very much. However, given that I've already ganached the top, the strawberry option looks like the way to go.
I'll have to race off to the supermarket in my lunch hour...

Good luck Frogdancer. I have had this happen to me with a few cakes now but unfortunately I haven't figured out why it happens :-\
I usually do the trick Goldfish suggested. I fill it up with some levely fresh strawberries or some maltesers or other chocolates ;D

Just updating.
Filled the top with strawberries, too the cakes into work and they were blown away with how great they looked and how gorgeous they tasted.

Just caught up with your post, Frogdancer (love your name!! ;D) - so glad everything turned out ok. That Torte Caprese has become quite a favourite in our household!! Quick, simple but oh, so good!! I had passed over that recipe so often until I tasted the cake made by a friend . . and - as they say - the rest is history! ;D

IMHO - and experience - absolutely! :D Now I would have no hesitation cooking this a day ahead. We find it's great on its own -(a tradesman the other day had four slices with his two cups of tea :-))), or as a dessert with custard, icecream, etc. We've had our TMX for almost 10 months and I never even considered trying this until recently . . . :-)) ???

I think it would be but others may not agree. Quirky Jo has a topping on her blog that she puts on the torte. It looks really yum.
