I'm not sure if I'm Doing something wrong, perhaps overmixing, but I'm not very impressed so far with the thermoelectric and baking. I've made banana and choc chip muffins, the $4 mud cake and the easy choc cake in the EDC but each time the results haven't been great. It seems to me that baking the old fashioned way is better. Does anyone else think this?

What speed and for how long are you mixing your batter/dough, Miss 50's?
I find the TM brilliant for whipping up quick cake batters or biscuit doughs. I am making a cake right now actually ;D

I don't make a lot of cakes Miss 50s but this chocolate cake (http://www.forumthermomix.com/index.php?topic=1097.0) recipe is very popular on the forum and I love this carrot cake (http://brazen20au.blogspot.com.au/2008/04/brazens-thermomix-carrot-cake-2-cups.html) too.

I find that if I am making a cake for a very special occasion I will use the old way but for everyday ones I use the TMX. I used to feel, as you did but have now changed my opinion. I cream the butter and sugar at about speed 3, that way you don' t have to scrape the bowl down. Be careful not to over mix as it is easy to do. Try the recipes Judy suggested, they are lovely.

I also used to have many "flops" (literally). However after much perseverance, I have found the secret is to only mix until the flour is just incorporated and not to overbeat. Now I would say 90% of my cakes turn out well. Good luck with your baking.

I'm just following the recipes exactly. I do think I overmixed the muffins. I'll try some of these tips - thanks :)

Definitely all the recipes are over processed. As has been said cream the butter and sugar on speed 3 for about 1 minute and only mix until the flour is incorporated (most times this is under 30 seconds) and for muffins I use approx 3 quick pulses of the turbo button ;) There is a thread on here somewhere with this discussion. I will see if I can find it :)
