Ok, i have whipped cream, no buttermilk, just nice whipped cream

Do i keep on going on speed 4??

Panic over, I just kept whipping away & out came the buttermilk. Rinsed 3 times. YAY I HAVE BUTTER

I was going to say - keep whipping until you hear the sound change (I keep an eye through the hole and usually get squirted by the first of the buttermilk). You will get used to the change in sound but if you beat too long, you will beat the buttermilk back into the cream Hally.  Well done H.

I add about a teaspoon of salt and 50g light-flavored oil to mine, and it lasts at least 2 months in the fridge.
I only use it for sandwiches or toast etc, as I buy butter for baking.

I haven't made it with the TM yet either! I have some cream sitting there ready to make it, but just haven't done it yet. It'll be my first job tomorrow morning.

That is someone impersonating MJ.

I make butter all the  time especially when I find cream really cheap The older the cream the better the butter. I often freeze it and when I defrost it it takes but a minute to beat it into submission .

I love butter. Butter is best. I use pink Himalayan  salt and rice bran oil.

One of the reasons I havent made butter before was I thought it woukd be too hard. Also the cost. Now I have made it & bought my cream at a cheaper price I think its great. I use buttermilk for my Nigellas nuggets & a chicken drumstick recipe, so in future when I need buttermilk I will make butter as I think it is cheaper than buying butter & buttermilk.

Homemade buttermilk is more runny than the bought variety though Hally - will it still be OK?

I use buttermilk in my baking - pancakes, scones, muffins and cakes.. I always used to have a carton in my fridge, but now I freeze buttermilk left over from butter making for baking.

H, you can freeze the  cream until u are ready to make more butter and it works with thickened cream too, but not with lite cream

Great job Halex, your butter looks great.
If you were using the butter milk that day or the next I would keep it in the fridge, otherwise freeze it until needed :)
If I ever see cream marked down I will buy it just to make butter as it really is so quick and easy :)

I've only made butter once and it was really hard even left out of the fridge
I didn't add any oil though.

I don't add oil if I'm using it for cooking, but add oil if I want it for spreadable butter. I use grapeseed oil :)

I didnt add oil. Mine spead fine but I left it out the fridge, it is now in the fridge so might not spread? When do you add oil & how much?

If the buttermilk is runny how do you thicken it?

add the oil after the rinsing, how much, not sure how much i use,start with a few tbls and see how that gos i am sure someone will have the right about to use

the buttermilk you buy in the shops is cultured that is why it is thick. I find the runny buttermilk is just fine to use in all my recipes so far (and that's a fair few lol)

My D IL uses buttermilk in currys and lots of other things as well as bread.

I used to make butter when I first got my TMX but now I don't as I can't be bothered with all the washing up and the fact that it still goes hard even with oil added.

I really loved the taste at first but then got over it.

I try and get Lurpak butter when it is on special but just saw in the ingredients that it has transfat so that got me a bit worried.

Where have you seen low fat butter Hally - there is no such thing unless you are thinking of this (http://quirkycooking.blogspot.com.au/2011/07/making-butter-in-thermomix.htmlhttp://quirkycooking.blogspot.com.au/2011/07/making-butter-in-thermomix.html) butter spread on Quirky Jo's blog where she adds oil and water to her batch of butter.  The addition of the water would extend the amount of the butter and maybe lower the calories slightly - someone correct me if I am wrong in this assumption.
