Title: Smoked Salmon Mousse Review from Devil of a Cookbook p.68

This is one of those simple recipes, which works really well.  The flavour is very intense, featuring smoked salmon, cream cheese, capers, dill and lemon juice.  I wanted to make it but realised I only had 100g of smoked salmon, when the recipe called for 250g, but it was still beautiful and very rich.  To my way of thinking it was more of a dip than a mousse as we weren't required to let it set at all. 5/5

I'm not a food stylist - drowned the dip in chives, but believe me, Merlin, this recipe is well worth trying.  If salmon is expensive where you live, you too could probably cut down the amount called for.

I made this on Friday night when we had friends coming over. It's more of a dip than a mousse. I served it with toasted ciabatta and vegie sticks. Everyone loved it.

It makes a lot snd we had quite a bit left over, so last night I cooked some pasta, sautéed some zucchini strips and mixed the left overs through the pasta, along with the zucchini, some left over roast pumpkin and some extra smoked salmon. It made a lovely dinner.
