I have placed this basic curry sauce here as it is the base for a main meal.
Scallops, fish, cooked chicken or veggies can be added to make a main meal , served with Mash, rice and salad or veggies.
It is a very good consistency for pies.
Ingredients
1 medium size onion
45 g butter
2 Tablespoons Flour
2 teaspoons curry powder
1 1/2 cups milk, skim, low fat Ok
1/2 cup Mayo.
2 teaspoons lemon juice
1 egg
Method
Chop onion in TMX, speed 7 , 5 seconds.
Add butter and cook on 100 for 4 minutes. Speed 3
Add flour and cook for 2, 100, speed 3
Add rest of ingredients EXCEPT egg, cook speed 4 /10 minutes/100.
Add egg and mix speed 4/ 10 seconds.
If using scallops, 500 g to 1 k is suitable. Slice in 1/2 to make thin discs and add to hot mixture, stir on reverse for 30 seconds. The heat will cook the scallops.
If using fish, slice into small cubes , 2 cm , steam in TMX tray and add to hot sauce.
Cubed cold chicken can also be added OR Pan fry small cubes and add to sauce.
Steamed veggies can also be added.
Don't forget the pies!!

If only we could get nice scallops over here. Miss my tassie scallops with the roe left on.

I agree jeninwa. The scallops here are like cardboard. A lot of seafood is sadly.

I love scallops, have some in the freezer.

I very rarely buy seafood as it is so expensive and usually doesn't taste very nice.
