passionfruit cordial

My kids love this one.


225g white sugar
375ml water
250ml fresh lemon juice
250ml fresh passionfruit pulp

Place sugar, lemon juice and water into TM bowl and cook for 5 min, 80º, speed 2.
Check that sugar is dissolved.
Increase heat to 100º and cook for 10min, speed 1.
Liquid should be a glossy syrup. Cook for a further 5min if needed.
Add passionfruit pulp and mix on speed 4 for 10 seconds. Allow to cool.
Strain to remove seeds if desired and store in a bottle the fridge.

Tips: Tin passionfruit can be used instead of fresh. Sugar can be reduced. Orange juice can be used instead of lemon juice.

Friend gave me some passionfruit from backyard and we have the last batch of lemons from backyard.  Perfect match for this cordial.  Making this now!

I just said to my DH as I opened this ... I wonder if this would taste like pasito if it was mixed with sparkling water!!!

Made it today with lime juice instead of lemon. Absolutely delicious. DW loved it.

This is my absolute favourite atm. New to Thermomix and trying out new recipes. I also replaced white sugar with low Gi Raw sugar and did part Lime and lemon. Delicious Thank you for the recipe.
