Lime Mousse Pie - For foods sake

This pie is lovely and refreshig, not overly sweet, but enjoyable after a spicy or heavy meal.



I loved the simplicity of the pie base, and had a great nutty taste.
There is a lot of filling, and I managed to make 2 pies from the filling, using a standard sized pie plate.
I would suggest you use a high sided dish, or a spring form pan.

Would make again.

Yum, that looks really nice Maddy. It is one of the recipes I have earmarked to try and your photo has just bumped it up the list.

The lighting wasn't too great, so will try and take a clearer shot tomorrow with some natural light.

I candied some limes this morning to pop on top......UGH!.......limes went in chook scraps  :P

Maddy thanks for the tip abut the filling. I bought double the walker bscuits & made 2 pies.. In the fridge hoping they will set. I could not get my low fat cream to form soft peaks ??? I remeber I had problems with the cream before.

Any tips anyone?

The mixture asted devine.

Low fat not so great for whipping sorry, maybe dissolve and add some more gelatin.

Both pies in the fridge, see how they go. They have firmed up a bit, so goping they will be OK

OK, have to admit my near miss medical emergency. ???

Had pie on bench, cut into pie, had to be strong as firm. Cut a slice, put knife under at the side of dish, oh well pie flipped, knife flipped & my life flipped. Knife hit chest, pie hit floor, I screamed, DH asleep on couch, ds rushed over, ds sent alarm off to to dh. Dh sad he woud deal with it all, dh sat on chaise longe with plate of pie ??? ??? Wheres mine I i said, dh said, sawpiece mssing, thought youate that :-)) :o ???

?i said did you see piece on floor, oh yes thought that was another piece ???
