Pork, Apple & Prune Hotpot

Name of Recipe:Pork, Apple & Prune Hotpot using cooked meat
Number of People: Serves 3-4 with vegies on the side
Ingredients:
1 tbspn oil
150g leeks, sliced thinly
200g leftover pork roast cut into 3cm cubes (I used a pork scotch roast which I had cooked medium)
350mls boiling water
1 tbspn vegetable stock concentrate
55g uncooked long grain rice
4 fresh sage leaves, sliced
90g seeded prunes, halved
2 apples, cored and cut into 3cm cubes - use Granny Smiths or Golden Delicious

Preparation:
Heat the oil for 2 mins/varoma temp/speed 1.
Add the leeks and saute for 7 mins/100o/reverse/speed 1.
Add the remaining ingredients and cook for 15 mins/100o/reverse/speed 1.
Taste for seasoning and add S & P to taste.

Tips/Hints:

The texture of this dish is fine if served fairly close to cooking but you may need to add a little more water to any leftovers as the rice will thicken it slightly.

looks really delicous JD - pity we never have any leftovers in this house after a roast.

DH and prunes, not a happy combination in this house. :D It does look delicious but would have to double up on the apple.

You wouldn't even know they are in there CC, they certainly get mushed up but if you mean his body and prunes are not a good combination more than he doesn't like them, then I completely understand although they certainly don't have that effect on me IYKWIM   ;) ;)

This sounds yum. Now all I have to do is save some pork roast from DH.
